Buddha Bowl

The other day I was in a hurry to make dinner and whipped together this delicious buddha bowl! All it requires are some roasted veggies, quinoa, and a simple tahini dressing!

Ingredients :

  • 2 heads of fresh broccoli
  • 1 sweet potato
  • Handful of Kale
  • Quinoa (2 servings)
  • 1/2 cup tahini
  • Juice of half a lemon
  • Tsp of cumin
  • Tsp of garlic powder

Pre-heat your oven to 425 degrees F. Chop up your broccoli and sweet potato into small pieces, and drizzle with olive oil, salt and pepper! Roast for 20 minutes, take the broccoli out, and roast the sweet potatoes for another 10 minutes.

Cook the quinoa according to the package instructions, and add in your kale to the pot once cooked.

– Mix the tahini with the lemon juice, cumin, and garlic powder. Slowly add cold water until it becomes your desired consistency.

To assemble, start with the quinoa and kale, top with your crispy broccoli and sweet potato, and then drizzle with the dressing. Add Sriracha for some spice and enjoy!
