Homemade Vegan Mac & Cheese

This might sound ridiculous but the hardest part of going vegan for me was giving up Mac & Cheese. It’s my all time favourite comfort food, and I had perfected my non-vegan recipe 😭 Once I went vegan, I’m not going to lie to you I cheated a couple times for “real” Mac and Cheese because I just couldn’t find a vegan version that I liked. I tried a few different box versions and I found that they all had a very strong taste that I didn’t love. To me, the most important part of living a vegan lifestyle is not that you restrict yourself until you feel deprived and unhappy, but that you try your best. That’s why I decided to try and create my own homemade vegan Mac and Cheese recipe! This one turned out PERFECTLY. It’s creamy, flavourful, tastes “cheesy” and doesn’t use any fake/processed cheeses.

What you’ll need:

  • Noodles of choice (I went with Macaroni noodles)
  • 1/3 cup vegan butter or margarine
  • 1 tbsp flour (can sub GF flour if needed)
  • 1/2 cup soaked cashews
  • 1/2 cup vegetable broth
  • 1/2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Turmeric
  • 1/3 cup Nutritional Yeast
  • Salt & Pepper
  • Optional: Sriracha
  • Green onions or chives for topping

Instructions:

Cook your pasta according to directions, drain and put aside. Blend your soaked cashews with 1 cup of hot water until it becomes a creamy consistency.

Melt your vegan butter in a pot and add in the flour. Whisk until it’s combined into a paste texture. Slowly add in your vegetable broth and stir until it starts to thicken, then add in your cashew cream. Once it’s all combined, add in your seasoning and nutritional yeast. Stir until everything is mixed together, taste your sauce to make sure the seasoning is how you like it! At this point, I add a little bit of Sriracha or cayenne pepper for some heat. Let your sauce simmer for 5 minutes to thicken, and stir occasionally. Once your sauce is ready, add it to your noodles and mix (fold the sauce in gently if you are using Gluten Free noodles)

Serve topped with a sprinkle of Paprika and green onions. Enjoy guilt free knowing no animals were harmed in the making of this delicious dish!
